The shape of curves and how metal crystals grow

How does the shape of an arrest tell us about the structure being formed in the sample? The picture on the right has a weak arrest. There is barely a bend
in the green curve and you can't see a thing on the red curve.
But the arrest on the right takes a deep dive down, even passing through zero and you can see the bending in the red temperature curve. What does it mean?
Heat adsorbing arrests - shrinkage and other bad things
Some times instead of producing heat, an arrests adsorbes heat. This is shown because the cooling rate arrest bends up instead of down. Why is that?
